Macaroni Salad with Bacon, Peas, and Creamy Dijon Dressing

Cooking Time: 9-10 minutes (noodles)

Prep Time: 15 minutes

Dressing:

1/2 c (4oz) cream cheese

1/4 c chopped shallots

1/4 c mayo

2 Tbsp Dijon mustard

2 Tbsp lemon juice

1 Tbsp white wine vinegar

3/4 ts pepper

Prepare dressing: Combine all ingredients in a processor, until smooth, cover and chill. I would make double, and keep half for when serving.

Salad:

8 oz elbow noodles

2/3 c fresh green peas (English pees are good for this)

2/3 c finely diced red bell pepper

2/3 c finely diced red onion

1/2 c thinly sliced green onion

1/2 tsp chopped parsley

1/2 ts grated lemon peel

1 Tbsp bacon crumbles

Prepare salad: Cook pasta; adding peas during the last 3-4 minutes of cooking time. Drain, rinse with cold water, drain. Combine pasta mix with the next 4 ingredients (bell pepper, onions, and parsley), in a bowl. Toss with HALF of dressing mix. Cover and chill until ready to serve, toss salad with remaining dressing, add bacon and lemon peel on top.

 

Pros:

SOooo easy to make

Kid friendly, my son loved it (a 2 year old!)

Really crunchy, tangy, cucumber-ie taste

Truly good for you…even if you took out the bacon bits

Very filling, a very good stand alone or side dish

Cons:
