Crock Pot Lamb Leg

This was our Easter Dinner, lamb leg from the crock pot! So nummy.

Ingredients:

2 lb lamb (we have a 6 qt crock pot)
4-5 small-medium potatoes, cut into big pieces
5-6 carrots, cut into big pieces
1 medium white onion, cut into big pieces
1 Tbsp rosemary
1 ts salt and pepper
2 Tbsp lemon juice or 1 lemon juice
1 Tbsp olive oil
3-4 c water, enough to cover the top of the lamb
1 c beef broth
1/2 lb green beans, fresh

Place the lamb into the crock pot. Cut the vegetables. Pour in water, broth, and add in ingredients. Allow to cook 8 hours on low.

Crock Pot Chicken Noodle Soup

Ingredients:

1 lb chicken breast (frozen or not)
1-2 carrots diced
1-2 celery sticks diced
1 ts poultry seasoning
1 ts salt, optional
1 ts pepper
1 tbs dried mint leaves
1/2 medium onion diced
1/2 c corn (frozen or not)
1/2 c green beans (frozen or not)
5 c water
2 c chicken broth

Directions:

Put all ingredients in Crockpot. Cook on low for 6-8 hrs. If you put frozen chicken allow to cook until 1-2 hrs left of cooking time, and dice or shred, then re-add to Crockpot to cook until done.
